Saturday Refreshments - Sharon's Sangria

The "Signature Cocktail" is all the rage on the wedding blogs; I did enjoy a few Lemon Drop Martinis at Blair and Ryan's wedding in May, and Clay liked their Dirty Martinis with bleu cheese-stuffed olives.  Sharon wanted a special drink for her wedding, and since her colors were blue and orange, we messed around a bit with blue cocktails (ick).  Dropping the blue idea, we finally came up with an easy and delicious sangria, which was a big hit -- I know we went through at least 12 bottles of wine!  Several people at the wedding asked for the recipe, so here you go!

Sharon's Sangria
1 cup peach schnapps
2 bottles Oliver Soft White wine (I tried a Riesling this week, and it just wasn't as good.  Plus, Oliver is an Indiana winery)
1 2-liter ginger ale
lots of fruit, probably 8 cups or so -- sliced oranges, apples, grapes, strawberries, blueberries, etc.

Put all the fruit in a large container (the nice jar above is from Walmart!) and pour the schnapps and wine over all and give it a little stir.  Let marinate for 6-8 hours, or overnight.  When ready to serve, pour in ginger ale.  Serve over ice, and be prepared to make more!  (The original recipe we worked from also called for a cup of cognac, which was a little intense, and made the drink $$!  So, we left it out and thought it was just right.)

The Pioneer Woman has a great sangria in her cookbook and she posted this coffee concentrate recipe last week, both of which I might just make this weekend!
