It's been a big few weeks. Nate graduated,
Will graduated,
our great kids -- Sarah, Will and Maggie
we went to the race,
(and dinner at Mesh, a show at the Phoenix, the Parade, lunch at Barcelona and fun at Wine and Canvas! Such a great weekend with such an outstanding group of friends.) and I made a few cakes
Graduation party cake and 13+ dozen cupcakes. (German chocolate, chocolate, mocha, strawberry, lemon and red velvet)
Just for Tammy, here is the recipe for the Mocha Cupcakes:1 devil's food cake mix
2 T. cocoa powder
1T. espresso powder
1 1/3 c. buttermilk
1/2 c. canola oil
3 eggs
1 t. vanilla
Put all in mixing bowl, and using a hand mixer, mix on low for a minute. Scrape the bowl and beat for 2 minutes on medium. Pour into cupcake tins and bake for 18-20 minutes, until the top springs back under your finger. Cool and frost with this:
1 stick butter, softened, 3 c. sifted powdered sugar, 3-4 T. cold coffee, 1 T. cocoa, 2 T. espresso powder. Beat butter until fluffy, add about half of the p. sugar and beat a little more, about half the coffee, beat, rest of the p. sugar, cocoa and espresso powder, beat, rest of the coffee until it is the consistency you want.
Next up? Convention details to finish up, closet cleaning, and tidying/prettying up my blog -- I just can't figure out why all the white space, and why things don't publish as they do on my design page? I've been investigating some beautiful blog design sites, and am really ready to make some changes. I also got an invite to Pinterest, which I predict will be another great inspiration (read: time suck!) for me. And maybe next week I'll post some of my recent furniture re-do's. You should see the great red chair I got at the flea market -- just wait!
But this week is wedding planning! Cocktails to mix, centerpieces to design and cupcakes to bake! "Knock, knock. Who's there? Orange. Orange who? Orange you glad the wedding day is almost here?"
